6 ounces of pasta (uncooked tri-color wagon pasta)

2 tablespoon of olive oil

2 chopped stalks of celery

Preparation method:

Mix the sausage, breadcrumbs, ground beef, cheese, egg, milk, garlic, parsley, 1/8 teaspoon of black pepper, and chopped onions.

Use the mixture to make small balls with your palms

Over medium-high heat, heat oil on a skillet, add the meatballs and brown them in batches

Place the balls on a paper towel to drain excess oil

Over medium heat, melt the butter in a saucepan

Add the carrots, yellow onion, celery and cook until soft

Add in the meatballs, tomato paste, stock, tomatoes, salt and pepper

Bring to boil, minimize the heat and simmer for about 30 minutes

skim the fat from the surface

To cook the pasta, boil salted water in a saucepan, add the pasta and cook for about 8 minutes

Serve the pasta with meatball soup
